From La Butte’s plot, the black jack and the gray jack are on shelly falun soil. With a yield of 55 hl per ha, the harvest was made on September 21, 2021. Destemmed and followed by a short maceration on the skin, the alcoholic fermentation took place in vats. Filtration and early bottling allows the primary aromas to be retained.
Tasting: the dress is between salmon and currant. The nose navigates between raspberry and redcurrant, with a hint of "English candy". The palate is round, fresh, taut on the razor's edge (reinforced by a slight beading) with a backfiring/gourmet red fruit. It's pretty totally irresistible. The finish is clean, finely chewy, with a hint of sugar that rounds it off and gives it a tangy candy side. Yum!
