This ancestral method comes from Chenin and Grolleau gris. The soil of the different plots is composed of clayey silt resting on shelled falun (sedimentary soil from the Miocene of about 15 million years).
Immediately after pressing, the juice was drained into vats so that part of the alcoholic fermentation could take place, before the completion of the transformation of sugars into alcohol, the wine was bottled in December. The disgorging takes place after a stay of 6 to 12 months on slats. This wine has no added sulfites, including at bottling.
