Pétillant Naturel Conti 2023 – Easy Pét-Nat White

Terroir: Soils of decarbonated Agenais molasse (calcosol on silty-sandy limestone molasses) and clay-limestone on limestone with asteria and Agenais molasses
Vinification: Very gentle direct pressing. Partial fermentation in stainless steel vats – indigenous yeasts. Minimal filtration at 2/3 of the fermentation. Bottled on September 20, 2023 with crown caps
Natural bubble formation in bottles
Pairing: This vintage is the embodiment of the first sparkling wines, produced using the ancestral method. Lovely little bubbles, very little alcohol and a very fresh fruitiness that make it the ideal aperitif during the summer!
In order to avoid an “eruption” when opening, we advise you to place it upright in the fridge 24 hours in advance (and to open it rather on your sink than on a pretty tablecloth, even if it is less romantic).
Tasting: The color is light gold, with fine scattered bubbles and a fleeting foam. The nose is very discreet, on pear and (false) acacia flower.
The round mouth bursts with freshness from the attack while offering a fine, airy, thirst-quenching material, with delicate, almost creamy bubbles, on fresh pear and lemon zest.
The finish is very “brut nature”, with this mix of citrus peel and quinquina reminiscent of Schweppes® and a slightly more marked frizzante, immediately making you want a second glass.

Vinification without inputs
Vineyard without chemicals, respectful of its environment
Harvest: Mechanical (allows to wait for the exact point of maturity) at dawn to bring in the freshest grapes possible.
Vinification: Direct pressing, cold settling and stabulation on the finest lees for 7 days. Fermentation for 4 months in indigenous yeasts (like all our wines) to preserve the typicity and originality of our terroirs.
Temperatures are maintained at 14-16°C during fermentation. No malolactic fermentation. After a light racking, the wine is left in vats on fine lees for a short aging away from the air punctuated by a few rackings.
It is then lightly fined with bentonite and then filtered on earth. This wine is therefore alive and will be able to evolve in the bottle.

Bergerac Larcin 2022 – Easy Red

Yield: 40 hl/hectare
Vinification: Carbonic maceration for about ten days then devatting. The dried grapes are then destemmed and crushed to be returned to the vat and finish their fermentation in classic maceration but without extraction.
The wine is then put in barrels or demi muids (600 l barrels all of at least 3 wines) for about 10 months. It is then bottled without fining or filtration and without sulfiting.

Vin de France Apis 2022 – Easy Red

Julie Paolucci is first a sommelier in Paris, but she returns to the South of France in Rasteau her native land – to take over the family business.
Today, she is a winemaker at Domaine La Luminaille and represents the 5th generation; But she is the first generation to vinify the Domaine’s wines with a first vintage in 2015.
The vineyard extends over 12ha of vines on hillsides on the north of the village of Rasteau, on the place called La Luminaille.
Vinified in an artisanal and organic approach, the wines are typical of their terroir, with freshness and elegance.
This cuvée comes from old Carignan (70%) and Grenache (30%) vines. Apis or “the bees” in Latin refers to the hives that were present on the estate.
Grape varieties: Carignan 70% Grenache 30%
Terroir: From a terroir of hillside plots with clay-limestone soil in the commune of Rasteau
Vinification: Harvested by hand, in small crates. Vinified partly in whole bunches that are not crushed or destemmed, with indigenous yeasts in concrete vats. Vatting for 10 days.
Maturing: in vats and amphorae until bottling in the spring. Vinified without added sulfites.
Tasting: the color is translucent dark garnet. The nose is fine, deep, on plum, graphite, laurel and peony.
The palate is round, ample, velvety, with a freshness and an insolent fruit, with a pulpy, gourmet, quite irresistible material.
The fleshy finish offers a roguish chewiness that will end up convincing the most hesitant, with a vibrant fruit underlined by liquorice, violet and notes of garrigue. A favorite!

Le P’tit Vaillant rouge 2023 – Original Red

Vinification: Blend of Groslot and Cabernet Franc with aging in underground ceramic vats. Without filtration or added sulfites
Natural SO2: 20 mg/L
Tasting: the color is dark translucent purple. The nose is fine, with floral (peony, violet), fruity (elderberry, morello cherry) and spicy (pepper, cinnamon) notes, with a touch of incense.
The palate is round, ample, velvety, with a supple, juicy, very fruity material, toned by a light sparkle that tickles the tongue.
The finish offers a tasty chew, full of fruit, prolonged by a tangy line – evoking the sweets of our childhood – and a host of spices. Deliciously crazy!

Or-Ange 2022 – Original Orange
Winemaker: Chateau de Jau

Blend: Chardonnay, Viognier, Muscat petits grains & Manseng – Treated as orange wines, they develop an unsuspected finesse and tonicity.
Vinification: The grapes are harvested at perfect maturity to obtain a juicy and expressive fruit.
Orange wine is a white maceration wine. For vinification, the musts of the white grapes were left in contact for a few days with the skins, seeds and stalks.
This type of vinification undeniably gives freshness and consistency to the grape varieties. The aging continues for a few months on fine lees in stainless steel vats before bottling at the beginning of the year.
Tasting: the color is an intense gold. The nose is fine, delicate, on vine peach, dried orange peel, faded rose and orange blossom.
The palate is slender, taut with a fine, trace acidity, while offering a round, supple, slightly frizzante substance, with an intense aroma; citrus peel, floral potpourri, sweet spices.
The finish gains in power and tonicity, with much more expressive (noble) bitters, and the laser acidity of the Manseng which goes straight and seems unstoppable.
All persistent on bitter orange, dried pineapple and a subtle hint of quinquina.
Food and wine pairing: can be served as an aperitif with a tapas board, or during a Mediterranean meal or spicy cuisine

Nicolas is a self-taught man, passionate about vines, sensitized by natural techniques of reasoned and reasonable cultivation.
He innovates, experiments and learns about plants that can provide natural and healthy fertilizers. He started in 2017 with just his enthusiasm and interest in vines and wine. He began his organic conversion in 2019.
In addition, he is also a beekeeper, hence the bee on the label.
We really liked their naturalness and their deliciousness, without falling into a “natural” style.

With “only” 3.5 hectares and soon one more – including a plot facing due south on the Puy Saint-Romain, “the Everest of the Limagnes” –,
Jérôme is advancing with measured but firm steps on the path of Auvergne viticulture. He is not arriving in unknown territory, family tradition having already led his father to “bring” to the cooperative winery.
“But I set up my business from scratch, especially in winemaking, with my first “real” harvests in 2009.” Jérôme trained in viticulture in Mâcon, but also in the wine trade.
He seeks to work on small yields to end up with highly concentrated wines, and… focuses himself on direct sales, at home or at fairs: “It takes a lot of time but it’s worth it.” »
Moving towards organic, developing other wines, particularly for aging: Jérôme clearly sets himself these objectives, but gradually, without excessive haste or peremptory deadlines.
If we dared, we would say that here as elsewhere, the junior of private cellars is trying to give time to time. “My vinifications are natural. That said, organic is not so simple.
Our concern is the management of the grass under the rows of vines: depending on the width of the plantations, it means either a lot of equipment or a lot of time…”
All this deserves trials and attempts, as do the variable durations of aging on lees of his rosé and white vintages.

Tasting: The color is translucent dark garnet. The nose is fine, ripe, refreshed by a hint of menthol / balsamic.
The palate is slender, stretched by an invisible thread, while deploying a supple, finely pulpy / velvety material, with expressive fruit and great diffuse freshness.
The finish is a little denser and tannic, with a chalky chew, intense cherry notes and a bright freshness.

Louise rouge 2022 – Easy Red

Producers of organic and biodynamic wines for 20 years, the winegrowers of the Malavieille and Mas de Bertrand estate are interested in the “Nature wine” route.
The objective of securing alcoholic fermentation without the addition of sulfites has been a reality since the birth of Louise Bertrand in 2012, who sponsors this vintage.
The grape varieties come from strains anchored in the terroir in an ancestral way: red carignan, grenache. Fermentation is done away from the air on indigenous yeasts with limited aeration in the active fermentation phase.
Tasting: The color is translucent dark purple. The nose is rather discreet, on stewed black fruits and spices. The mouth is round, ample, enveloping, deploying a finely velvety material, rather fresh despite a very ripe aromatic.
The finish is more concentrated, finely chewy, on plum compote, bay leaf and sweet spices.

A toi nous 2023 – Experimental Red

Having left the Czech Republic and after many encounters (Domaine Hauvette, Yann Rohel and Gérald Oustric), Andréa Calek stopped in Ardèche in 2007 to take the plunge into the production of his own natural wine.
While some consider Andréa Calek to be a UFO, we can agree that he plays his role as a rebel wonderfully. And if he has his head in the clouds, he also keeps his feet firmly anchored on the ground.
Vinification without sulfites, respect for the terroir, search for freshness and drinkability, Andréa Calek’s wines are a perfect and successful example of the natural “type”:
Syrah, Carignan, Grenache are pure grape juices that are easy to drink and rich in sensations.
Vinification: completely natural (without sulfites or other additives) – Carbonic fermentation.
Tasting: the color is dark garnet, very beautiful. The nose is deep, complex, on plum and its stone, blackberry, sweet spices and a slight milky touch.
The mouth is round, ample, velvety, with a pulpy / fleshy material and offering a great aromatic freshness, while not lacking a southern generosity. The finish is intense, ripe, and always of a beautiful balance.
A great quality / price ratio for a wine without SO2 and organic.

Pét’Nat Vents-Contraires 2023 – Complex Pét-Nat Rosé

Grape variety: 100% G14, a disease-tolerant grape variety.
Vineyard: 10-year-old vines, south-east exposure, low slopes.
Vinification: the grape variety reaches maturity at a low alcohol content / Ideal for sparkling wines / Pressing without rebêche / No addition of sugar or liqueur / Undisgorged wine causing a slight veil in the bottle.
The colour varies between rose petal and salmon, with fine scattered bubbles. The nose is expressive, with redcurrant, sour candy and orange peel.
The palate is lively, slender, stretched by a sharp acidity reinforced by carbon dioxide, with a fresh, intense, vinous substance, with vine peach, orange and spices.
The finish gains in power and breadth, with an even more intense aromatic, underlined by the bitter orange, giving you the impression of drinking a Spritz.
Serve between 12 and 13°C / Recommended storage at least 5 years

Chenin JL Denois 2022 – Complex White

Terroir of origin: Clayey from the Haute Vallée de l’Aude & Culture in organic conversion 2nd year – Manual harvest in crates
Vinification: pressing of whole grapes – Juice fermented partly in barrels and in vats without adding SO2.
The color is golden, tending towards pink gold. The nose is expressive, on the tapped apple, quince and marzipan.
The mouth is round, ample, airy, deploying a rather dense, fleshy material, dominated by quince jelly complemented by spices.
The acidity is ensured by a fine line of carbon dioxide complemented by a good aromatic freshness (candied lemon, orange peel).
The finish is intense and concentrated, with a nice Triple A: Acidity and Astringency of the lemon and Bitterness of the pomelo peel and a hint of quinine.

BDN En Parallèle 2022 – Easy White

Arnaud Combier, after studying at the “Viti” in Beaune, made his debut at Domaine Valette in the Mâconnais with Philippe, who he remains very close to.
He then made wine at the Prissé cellar and then spent three years at Colbois in Chablis. His desire to make the most natural wines possible led him to take over his grandfathers’ vines in 1998.
There, he created great textured and precious whites for more than ten years. When his elders died, the family chose to take over the vines.
He then spent a short time in the South in Pézenas where he met Jeff Carrel, then took care of the transition to organic farming of the Beaujolais vines of a large Burgundy merchant.
He joined Domaine des Moriers in 2018 to accompany a new adventure and make wines with delicate touches and aromas, those sensual wines that we love so much.
The color is pale gold with quite a few fine bubbles. The nose is dominated by buttery notes that are lightly toasted at the opening, with warm apple in the background.
The palate is round, ample, bursting with freshness thanks to the thousands of micro-bubbles, with a ripe material with a soft touch, still marked by this buttery side (starting on brioche).
The finish is livelier, with a sparkle that becomes more catchy / invigorating, complemented by tangy lemony notes.
Recommended aging at least 2 years.

Naturides 2023 – Easy Red

Located at an altitude of over 300 metres in the foothills of the Haut-Languedoc mountains, in the village of Cabrerolles, the estate owes its name to the enormous crater at its heart (200 metres in diameter and 80 metres deep)
The land on which the estate is located has a considerable influence on the quality of our wines.
The Cévennes mountains to the north protect from the harsh winds and create a downward current of fresh air that gives the wines freshness and acidity,
while the Mediterranean to the south sends sea breezes whose warmth promotes the optimal ripening of the grapes. What is more, we find in our wines the marked expression of the land on which the vines are established.
Rocky and schistose lands, derived from slate, are found in only a few regions of the world.
On schist, the roots of the vines must sink deep, producing modest yields and giving the wines a distinctive and renowned elegance and minerality,
while imbuing them with the aromas of the wild herbs characteristic of the surrounding garrigue.
Domaine du Météore is unique in having wines from two of the region’s most famous appellations: Faugères and Saint-Chinian (Roquebrun), between which the soil structure varies considerably.
Faugères is composed mainly of blue schist, while Saint-Chinian is dominated by a yellow/brown schist. Having vines in both locations allows their influence to be explored and compared across the range.
The estate is owned by Paul Jenkins and Paul Jarman, two London doctors and wine enthusiasts who have known the region for many years.
Passionate about the potential of the Languedoc to create exceptional wines, they have long searched for a vineyard with unique potential, history and setting.
When they discovered Domaine du Météore, they knew they had found the right terroir and vines to produce the wines they wanted.
Vincent Balansa, manager. A master winemaker, Vincent spent years at Domaine Le Soula in Roussillon and trained several famous winemakers.
Vincent is passionate about all aspects of winemaking, which he masters perfectly. He is leading the charge to refine the quality of the wines and move the estate from organic to fully biodynamic.
He firmly believes in letting nature produce its riches without interfering, which is reflected in the increasing elegance and complexity of the wines.
Jean Natoli, consultant. He is a renowned agronomist-oenologist and one of the most influential wine experts in the Languedoc.
He believes that each wine should have its own character and purpose, and has facilitated the creation of several of the best wines in Languedoc.
He collaborates with Vincent to create the wines, combining his remarkable technical experience with Vincent’s winemaking skills.
The colour is opaque dark purple, tinting the glass when swirled. The nose is expressive and gourmand, on black fruit coulis, violet and incense.
The palate is round, ample, velvety, offering a pulpy flesh of impressive density, and an intense fruit of brilliant freshness, forming an absolutely irresistible whole.
The finish is a little firmer, but the gourmandise and freshness are such that we forgive it everything, with a persistence on blackberry coulis, violet and cocoa.

Massif d’Uchaux 2022 – Complex Red

Terroir: These are medium-sloping clay-limestone soils with a full southern exposure. The vines are young (20 years old).
Vinification and aging: For this vintage we carried out a vinification with carbonic maceration in order to express all the aromatic potential.
The purple color is clear for a southern Rhône. The nose combines candied fruits with notes of carbonic maceration.
The palate is round, ample, airy, deploying a finely velvety material refreshed by a light sparkle and a fine vegetal trait (stalk). The finish combines a fine chew with a rascally grip, on plum, cherry and spices.

Antidote 2022 – Easy Red

Demeter certified since 2015, Bertrand Galbrun works his 4 hectares of vines following the precepts of biodynamics.
He offers several Bourgueil vintages, both “gravel wines” on the fruit, but also a more concentrated vintage whose grapes come from the clay-limestone soils of the appellation.

Vinification: three weeks of carbonic maceration, without the addition of any input. Aged in concrete vats. No addition of sulfites, even at bottling

La soif des Salines 2023 – Complex Rosé

In 2002, when Emilie and Brice Bolognini were just over 20 years old, they decided to take over the Mas Mellet estate in Gallician in the Gard. At the time, it consisted of 27 hectares of abandoned vines.
No matter how much work was needed, the first vintage arrived in 2003. Very quickly, the obvious need to work organically led the couple to reduce the cultivated land to 16 hectares in production today.
In the vineyards, manual work is the priority and sheep work during the winter. Certification arrived in 2007.
For these Gardois, wine is a true vocation and a passion through which everyone expresses themselves in the vineyards, in the cellar and at the administrative level.
“Sometimes, everyone makes their own vintage according to their sensitivity of the moment”.
Over time, the desire to intervene as little as possible in all stages of the process has taken hold at the estate. From now on, viticulture is conducted biodynamically, relying on lunar calendars and plant-based preparations.
Sulfite is becoming rare… Emilie talks about “growing the grapes in the best possible conditions” while Brice defines himself more as a guide, “basically it’s the terroir that decides and we follow”!
This terroir that they love so much and that guides them is that of Costières de Nîmes, the southernmost of the appellation.
Made up of sandstone and gapans (red clay), hilly, it is located in a windy corridor that protects it from disease.
And its proximity to the Camargue ponds, visible from the estate, and the Mediterranean Sea, gives its wines a welcome freshness and beautiful saline notes. This is where the whole terroir of Mas Mellet is expressed…
Vinification and aging: Maceration for 5 days, followed by running off. Half of the aging is in vats, the rest in old barrels (over 10 years old).

Vin nouveau Cazes 2023 – Easy White

The vineyard covers an area of 220 hectares with a diversification inspired by our thirst to understand and try new things, but also by the many terroirs that exist in the region.
These terroirs are ideally located at the crossroads of the Agly terraces, straddling the villages of Rivesaltes and Salses-le-Château.
Soil type: Clay-Limestone
Vinification: Slow and gentle pressing to preserve the aromas. Cold settling to ferment on clean musts at 14/16°C. This wine is lightly aged on fine lees.
Aging: Early bottling on October 9, 2023.
The color is light gold, brilliant. The nose is fine and intense, with ripe yellow fruits (melon, apricot) and floral notes (honeysuckle, false acacia), with a hint of spices.
The palate bursts with freshness from the attack before offering a round, crunchy, thirst-quenching substance, with ripe and delicious fruits underlined by a touch of carbon dioxide.
The finish gains even more pep and freshness, enhanced by a noble bitterness on the apricot stone. On the other hand, for those who are sensitive to it, a slight “mouse taste” appears a few seconds later.
Pairings: Asparagus, citrus salads, fish and other seafood.

Vinification: Manual harvest, use of indigenous yeasts (pied de cuve method). Daily punching down for slow extraction. Vatting for 8 to 10 days. Cold fermentation then tight filtration and bottling in December 2023.
Food and wine pairing: A pure fruit red, combining the roundness of Gamay de Bouze with the fruit of Gamay noir. A pure but fragile juice
The color is very dark purple … but translucent. The nose is fine … but rich, on candied black fruits refreshed by menthol, bramble and cherry stone.
The palate is round, very ample, airy, unfolding a fine, racy, deep material, gradually gaining in “pulp”, with always this unreal paradox between ultra-ripe fruit and overwhelming freshness.
The tonic and generous finish is the most concentrated of the different vintages, marrying black cherry, candied raspberry, stone and resinous-balsamic notes.

Maturing: In vats on lees / Filtered wine without sulfites / Bottling without sulfites.
