Blend 50% Syrah, 40% Grenache, 10% Mourvèdre
Clay-limestone soil dotted with schist debris and siliceous pebbles, an association conducive to the production of very high quality wine.
Vinification/Aging Minimal work: harvesting very early in the morning to limit spoilage. Vatting and fermentation as flexible as possible at 25°C. 1 to 2 pumping overs per day, Devatting after 10 days, separation of the presses to eliminate any bacteriological risk. Relocation in full tank for malolactic fermentation. Aged for 3 months in vats before filtration and packaging at the end of winter.
The color is dark purple, barely translucent. The nose is ripe, greedy, on black fruit cream, freshly baked bread and spices. The palate is round, ample, enveloping, with a finely velvety dense substance, fleshy, with ripe fruit, intense, underlined by smoky notes. The finish delivers a tasty chew, with even more intense fruit, a little more marked smoke, and then bay leaves, cocoa and black cherries.
Food pairing; Prime rib or grilled bison steak.
