Clay-limestone soil is dotted with shale debris and siliceous pebbles, an association conducive to the production of very high quality wine.
Vinification/Aging The care given to the vines, and the work in the cellar are found in the cuvées “the texture is finer, with more depth and elegance”. It is in this logic of continuity, living vines, living soils, living wines that the new 2021 wine was made with total respect for nature and the original constitution of the reason, organic, biodynamic, harvested manually, vegan, it is vinified without inputs or additives (such as sulfites or artificial yeasts).
Tasting: the color is translucent purplish purple. The nose is very raw from the tank (in the positive sense) on the cream of black fruits and milky / yogurt notes. The palate is round, ample, velvety, with a supple, finely fleshy texture, gradually gaining in density, on the same aromatics as the nose, giving the impression of drinking a black fruit yogurt. The finish reveals a fine fruity chewiness, with a rascal / tangy side that makes you want to serve it again right away.
Food pairings the suppleness of this wine allows it to accompany a whole meal.
