From La Grande Espace du Noyer plot whose soil is composed of silty clay resting on alterations of shelly falun.
With a yield of 28 hl per hectare, the harvest was carried out in October 2021.
Destemmed, the harvest remained 36 hours in maceration, after pressing, the juice was drained into barrels so that the alcoholic and malolactic fermentations take place. After a stay of 3 months in these same barrels, the wine was racked in vats awaiting bottling in January 2022.
This wine is without added sulfite and unfiltered.
Tasting: the color is dark purple, almost opaque. The nose is greedy, on black fruit coulis, pepper and a hint of milk. The palate is round, fresh, crunchy, as fruity as the nose, with a luscious, slightly catchy substance, which gains in suppleness when you overcome the carbon dioxide, which is very present. The finish reveals a gourmet, tonic chew, with a bright fruit, and continues on peppery notes.
NB: this wine still contains carbon dioxide. To remove it, you have to decant it for a few hours or shake it carefully (better: shake the carafe)
