Cabernet Franc grape variety – Red wine – 75cl bottle – Vin de France – keeping: 4 years – serving temperature: 15-16°C

From the Champ du Moulin in Thouarcé with an area of 1ha, Cabernet Franc (Breton) grafted on Rupestris du Lot was planted in 1955, so well before the arrival of clones. The soil is composed of stony and clayey gravel resting on weathering falun (sedimentary soil from the Miocene, around 15 million years).

With a yield of 38 hl per ha, the manual harvest was done on October 05, 2020.

Destemmed, the harvest remained 48 hours to macerate, after pressing, the juice was drained into barrels so that the alcoholic and malolactic fermentations take place. After a stay of 5 months in these same barrels, the wine will be racked in vats awaiting bottling in March 2021. No addition of sulfite, including during bottling.

Tasting: the dress is dark purplish purple, slightly cloudy. The nose is complex, on fresh blackcurrant, bramble and grilled pepper, with a floral and finely minty touch. The mouth is round, ample, finely velvety, deploying a luscious, greedy substance, bursting with fruit, underlined by a slight pearling. The finish is tonic, with even more fruit and freshness, on blackcurrant, morello cherry and pepper. Delicious !
