Gamay de Bouze, Gamay de Chaudenay and Gamaret – Red wine – 75 cl bottle – IGP Urfé – Keeping: 3 years – Serve at 15-16°C

In a one-hectare plot facing south, at an altitude of 600 meters, Gilles Bonnefoy recently planted cousins of Gamay Noir à jus Blanc side by side: Gamay de Chaudenay / Gamay de Bouze / Gamaret

Age of the vines: 5 years. A single plot.
100% clay-granitic soil of the MIGMATITE type. Very heavy clays.

Vinification: 100% manual harvest. Destemming and mechanical then manual sorting. Use of indigenous yeasts (pied de cuve method). No chaptalization. Vatting for 10 days, maximum temperature 29°C. Aged in stainless steel vats. Light filtration. No added sulfites.

Tasting: The color is purplish dark translucent. The nose is reminiscent of black fruit cream well enhanced by pepper. A touch of raspberry, too. The mouth is round, ample, velvety, deploying a soft, caressing, finely fleshy substance, with an intense black fruit …. but classy. The pepper is still there, but not at all disturbing, providing a counterpoint to the fruit. The whole thing is underlined by a thin stream of gas which brings freshness and tension. The latter continues in the finish with an increase in pep and indulgence. A pure delight!

Pairings: grilled meats, fresh goat's cheese or, even bolder, a chocolate fondant.
